Quick And Easy Falafels

Soaking time: 8-12 hours
Cooking time: 5 minutes per batch
Yield: 20-25 falafels
Ingredients:
- 4 cups organic chickpeas
- 4 cloves of garlic, finely chopped
- 2 tsp cumin powder
- 1 tsp turmeric
- 1 teaspoon of salt
- 1/2 onion, finely chopped
- 1/4 cup fresh Italian parsley, finely chopped
- 1/4 cup water
- Juice of 1/2 lemon (1 tbsp)
- 1 pinch of cayenne pepper
- 1/3 cup organic soft wheat baking flour
- 2 tbsp olive oil
Preparation:
1) The day before, soak the chickpeas in plenty of water for 8 to 12 hours.
2) Drain the chickpeas and put them in a blender or food processor.
3) Add the garlic, onion, parsley, cumin, turmeric, salt, cayenne pepper and lemon juice.
4) Mix everything until you obtain a smooth paste. If necessary, add a little water to help mix.
5) Transfer the dough to a bowl, then incorporate the flour to obtain a texture that holds together.
6) Form balls or pancakes using your hands.
7) In a skillet, heat the olive oil over medium-high heat.
8) Fry the falafels in batches, turning them so they are golden brown on both sides.
9) Drain on absorbent paper.
10) Serve hot with sauces of your choice.
