Pecan Pie

Ingredients
Shortcrust pastry (2 crusts)
- 265 g (1 3/4 cup) sifted organic soft wheat baking flour
- 55 g (1/4 cup) organic golden sugar
- 2.5 ml (1/2 tsp) salt
- 150 g (2/3 cup) unsalted butter, cold and diced
- 30 ml (2 tbsp.) vegetable fat, cold, diced
- 60 to 75 ml (1/4 to 1/3 cup) iced water
Trim
- 4 eggs
- 210 g (1 cup) organic golden sugar
- 250 ml (1 cup) corn syrup
- 30 ml (2 tbsp.) butter, melted
- 5 ml (1 tsp) vanilla extract
- 100 g (1 cup) halved pecans
Preparation:
1) Shortcrust pastry: In a large bowl, mix the flour, sugar and salt. Incorporate the butter and vegetable fat until you obtain a sandy texture. Add the ice water little by little, until a smooth paste forms. Divide the dough in half, flatten slightly to form discs, wrap in plastic wrap and let rest in the refrigerator for at least 1 hour.2) Preheat the oven to 200°C (400°F).
3) Place one of the shortcrust pastry discs in a 9-inch tart pan. Prick with a fork.
4) Filling: In a large bowl, beat the eggs with the golden sugar. Stir in corn syrup, melted butter and vanilla extract. Mix well until all ingredients are well incorporated.
5) Arrange the halved shelled pecans evenly on the tart base.
6) Carefully pour the egg mixture on top.
7) Bake for 40-45 minutes or until the filling is firm and the top is golden brown.
