    Alternatives for the recipe:

    The grain mixture can be composed of the grains of your choice. In this recipe, we used pumpkin seeds , sesame seeds , and chia seeds .

    Ingredients

    • 2 1/3 cups (280 g) organic unbleached all-purpose flour
    • 1/2 cup (60 g) whole organic durum wheat bread flour
    • 1 cup (100 g) organic large rolled oats
    • 1/2 cup (75 g) grain mixture
    • 1 C. teaspoon (5 ml) salt
    • 1 1/2 cups (375 ml) lukewarm water
    • 2 tbsp. teaspoon (10 ml) inactive yeast flakes
    • 2 tbsp. tbsp (30 ml) olive oil
    • 1 C. tbsp (15 ml) organic golden sugar

      Preparation

      1) In a large bowl, mix the lukewarm water with the golden sugar. Sprinkle the yeast on top and let sit for 10 minutes until the mixture begins to foam.

      2) In another bowl, combine the flours, oatmeal, grain mixture and salt.

      3) Gradually incorporate the dry mixture into the yeast mixture. Add the olive oil while mixing.

      4) Knead the dough on a lightly floured surface for about 10 minutes, or until smooth and elastic.

      5) Place the dough in a lightly oiled bowl and cover with a damp cloth.

      6) Leave to rest in a warm place for about 1 hour, or until the dough has doubled in volume.

      7) Knead the dough again for a few minutes then form it into a loaf. Place it in a lightly oiled loaf pan.

      8) Let the dough rest for another 30 minutes.

      9) Preheat the oven to 220°C (425°F).

      10) Bake the bread for 35-40 minutes, or until nicely browned and the bottom sounds hollow when tapped.

      11) Let cool on a rack before slicing.

      • The grain mixture can be composed of the following grains: organic whole brown sesame seeds , organic shelled sunflower seeds , organic shelled pumpkin seeds , organic black chia seeds , etc.

      • Freezes.

      • Stores for up to 5 days at room temperature.
