Oatmeal, Apple and Maple Muffins

Ingredients
- 1 1/4 cup (310 ml) quick-cooking organic rolled oats
- 1 1/2 cup (375 ml) cow's milk or plant-based milk
- 2 cups (500 ml) organic unbleached all-purpose flour
- 1 C. tbsp (15 ml) baking powder
- 1/2 tsp. teaspoon (2 ml) salt
- 1/3 cup (80 ml) organic maple sugar
- 1/2 cup (125 ml) maple syrup
- 1 egg
- 1/4 cup (60 ml) melted butter
- 1 C. teaspoon (5 ml) vanilla extract
- 2 cups (500 ml) apples, peeled or not, cut into small cubes
- 2 tbsp. tbsp (30 ml) maple syrup
Preparation
1) Preheat the oven to 375°F (190°C). Grease or place paper liners in a muffin tin.
2) In a large bowl, combine the oats and milk. Let sit for 10 minutes for the flakes to absorb the liquid.
3) In another bowl, mix the flour, baking powder and salt.
4) Add the maple sugar, maple syrup, egg, melted butter and vanilla extract to the oat mixture .
5) Incorporate the dry ingredients into the wet mixture, taking care to stir well.
6) Delicately add the diced apples.
7) Divide the batter evenly into the muffin tins.
8) Drizzle each muffin with a touch of maple syrup for garnish.
9) Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
10) Let cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
